Mexican inspired tempeh slices

A fusion of Mexican and Indonesian cuisine these spiced tempeh slices are coated in a combination of Mexican spices and can be used for sandwiches, salads or as a meat replacement with some tomato rice and charred tender stem broccoli.

This dish a Mexican Indonesian fusion by combining tempeh- an Indonesian soy based protein with vibrant punchy Mexican flavours. This super easy recipe will have you loving tempeh in no time! I love tempeh and I’m always looking for creative ways to fit it into as many meals as possible as its so versatile. Tempeh is definitely an underrated vegan protein but can work so well in many dishes. This Mexican inspired tempeh goes perfect with some tomato rice and charred tender stem broccoli but can also be enjoyed in a sandwich or salad!

 

Ingredients and substitutes-

  • Tempeh- Tempeh is often overlooked by people and even many vegans say they don’t like it. However I’m sure many people felt the same way about tofu before becoming vegan. So please try some creative tempeh recipes before banishing it into the darkness! Tempeh is an Indonesian protein made of fermented soy beans, many consider it a health food. It packs a protein punch at 19g of protein per 100g so it is essential to add to your diet if you are struggling for protein intake. Tempeh is readily available at most big major supermarkets in the UK. Alternatively you could look in your local health food shop. Yes, I am a tempeh cheerleader haha!

  • Mexican chillis- If you can do try so source some Mexican chillis for Mexican cooking I like chipotle and ancho chillis, these focus less on the heat and more on a smokey flavour profile which really makes a difference to a dish. These can be found in some large supermarkets or can be bought online.

 

Top Tips!

Marinating-

This recipe instructs to brush on the seasoning and cook right away but if you have time on your side then feel free to marinate the tempeh for up to 24 hours to really let that flavour soak into the tempeh making for a much more intense flavour.

And now for the recipe!


Mexican spiced tempeh slices

​Serves- 2 Time- 15 minutes

Ingredients-

  • 200g tempeh

  • 50ml neutral oil

Spice mix-

Method-

  1. Slice the tempeh into thin slices and lay on a plate.

  2. Combine all of the dry spices together and mix well to combine.

  3. In a small dish add the oil with the spice mix and stir until combined into a paste.

  4. Using a pastry brush, brush the paste on both sides of each tempeh slice.

  5. Add a small amount of oil into a frying pan on medium heat and carefully place your tempeh slices in. Fry until golden and flip over to fry on the other side.

  6. Serve up with some tomato rice and chargrilled tender stem broccoli for a healthy but filling weeknight meal

  7. Enjoy!

FAQ-

· Can I use something other than tempeh?- of course! This seasoning blend is so deliciously and incredibly versatile. You can use and protein you like, even vegetables or stir through rice if you like. Everything can be spiced up with these beautiful Mexican flavours.
