Jerk inspired lentils


Crispy chilli oyster mushrooms. A Chinese takeaway classic

I absolutely love the flavours in jerk paste however I’m not great with scotch bonnets so this jerk inspired lentil dish has all of the amazing flavours but much less spice by using a regular red chilli. This one is a real flavour bomb and really elevates lentils if you often find them a little boring. Give it a try!

​Ingredients

  • 1 can green lentils

  • 1 large onion

  • 1 tin chopped tomatoes

  • 2 cloves of garlic

  • 1 red chilli

  • 1 tsp ginger paste

  • 2 spring onions

  • 1 tbsp olive oil

  • Juice of a whole lime

  • 1 tbsp soy sauce

Spice blend

  • ½ tsp nutmeg

  • ½ tsp cinnamon

  • 1 tsp ground allspice

  • ½ tsp black pepper

  • 1 tsp dried thyme

Method

  1. Firstly to make the jerk paste add to a food processor half of the onion, the garlic cloves, the ginger, the chilli, spring onions, olive oil, lime juice, soy sauce and the spice blend.

  2. Process this until smooth and set aside.

  3. Dice the other half of the onion and fry off until soft in some olive oil.

  4. Add the jerk paste and mix well.

  5. Next add in the tomatoes and leave the mix to simmer for 15 minutes.

  6. Lastly add in the lentils with their juice from the can and cook this down until it thickens.

  7. Serve up with some rice and a squeeze of lime juice over the top.
