Super simple vegan chickpea curry


Perfectly spiced flavourful tomato based chickpea curry.

Chickpea curry is my favourite very low cost recipe that can be made with ingredients you probably already have in your cupboard. It is packed full of flavour and is also healthy. Feel free to add in whatever veg you have in your fridge to add some more nutrients.

​Ingredients

  • 1 tin chickpeas

  • 1 large onion

  • 4 large tomatoes blended

  • 2 tsp garlic ginger paste

  • 400g passata or 1 tin chopped tomatoes

  • Juice of ½ a lemon

Spice blend-

  • 1 tbsp cumin

  • 1 tbsp turmeric

  • 1 tbsp garam masala

  • 1 tbsp coriander powder

  • 1 tsp chilli flakes (or more if you prefer spicy)

  • 1 tbsp salt

Method

  1. Chop the onions and fry in some oil until translucent.

  2. Add the garlic ginger paste.

  3. Next add all of the spice blend and salt and stir until combined.

  4. Add the blended tomato and cook through until bubbling.

  5. Add the whole tin of chickpeas and the passata. Bring to a boil.

  6. Turn down the heat and simmer for 15 minutes

  7. Using a potato masher mash some of the chickpeas and leave some whole for texture. Alternatively blend a few spoonful’s of the whole mix and add back to the pan.

  8. Taste and add more seasoning if needed.

  9. Serve and enjoy!
