Cheesy leek soup


Creamy cheesy leek soup topped with crispy bacon bits in a bowl served with some crusty ciabatta bread

Cheese and leeks are a match made in heaven! This soup truly is the ultimate comfort food. Serve this with some crusty ciabatta and eat up this hug in a bowl.

​Ingredients

  • 30g butter

  • 1 onion

  • 3 medium potatoes

  • 2 leeks

  • 3 cloves of garlic

  • 500ml veg stock

  • 2 bay leaves

  • 50g soft cheese

  • 50g grated cheese

  • 1 tsp smoked paprika

  • Salt & pepper to season

Method

  1. Dice the onion and garlic and cook in butter until translucent.

  2. Chop up the potatoes and leeks add them to the pan and cook for a minute

  3. Make the veg stock and add to the pan whilst hot.

  4. Pop in 2 bay leaves, put the lid on and simmer until the veg is soft.

  5. Lastly add in the cheeses and cook until melted.

  6. Add the paprika and salt & pepper and blend until desired consistency is reached.

  7. Serve up with some buttered crusty bread and enjoy!
